Quinoa-Cornbread - 4 pts

Amount Measure Ingredient -- Preparation Method

1 cup Quinoa flour

1 cup cornmeal

1/2 teaspoon salt

1 tablespoon baking powder

2 tablespoons honey

2 eggs

2 cups buttermilk

2 tablespoons oil

 

Preheat oven to 350F.

 

Mix dry ingredients in bowl. Mix wet ingredients in another bowl. Add wet

ingredients to dry ingredients. Pour into greased baking dish (8x8 or 9x9). Bake

at 350º for 30 minutes.

 

Makes 9 large pieces (or 12 small pieces)

 

ChupaNote: I put my metal greased baking pan in the cold oven and heat it as I

preheat the oven. Pouring the batter into a hot metal pan gives it a nice crust.
