Soba Noodle Salad - 6 pts

2 cups thickly sliced shiitake mushrooms

1 cup sliced fennel bulb

1 cup eggplant -- cubed pared (1 " pieces)

3 tablespoons balsamic vinegar

1 tablespoon olive oil -- + 1 teaspoon

1 tablespoon firmly packed light brown sugar -- or dark brown sugar

1/2 teaspoon salt

6 ounces soba noodles -- (Japanese buckwheat noodles)

8 ounces drained cooked red beans -- (preferably adzuki)

1 cup diced red bell pepper

 

Preheat oven to 450o F.

 

In large bowl, combine mushrooms, fennel and eggplant. In small jar with

tight-fitting lid or small bowl, combine vinegar, oil, brown sugar and salt;

cover and shake well or, with wire whisk, blend until combined. Pour over

vegetable mixture; toss to combine.

 

Spoon vegetable mixture onto large sheet of foil; fold foil to enclose vegetable

mixture, crimping edges to seal. Place foil packet onto baking sheet; bake 25

minutes, until vegetables are softened.

 

In large pot of boiling water, cook noodles about 5 minutes, until tender.

Drain, discarding liquid; place into serving bowl. Keep warm.

 

Carefully open foil packet. Transfer vegetable mixture to bowl with noodles;

toss to combine. Add beans and bell pepper; toss again.

 

Makes 4 servings
