Japanese Adzuki Red Rice - 8 pts

7 cups water

2/3 cups dried adzuki beans

5 cups glutinous rice -- rinsed and drained

1 tablespoon salt

3 tablespoons black sesame seeds -- mixed with 1 teaspoon salt

 

Place the beans in a large pot, and cover them with at least 7 cups of water.

Without covering the pot, cook the beans for one and one half to two hours, or

until soft. Drain the beans, reserving the cooking water to color the rice.

 

Combine the rice with the beans, 5 cups of the bean water and the salt. Cover

the pot and cook the beans and rice over low heat for about 30 minutes.

 

Serve the mixture on plates or in bowls, sprinkled with the salted sesame seeds.
