Adzuki Beans With Miso Dressing - Vegan 7 Pts

2 3/4 cup dried adzuki bean -- small red beans, or black beans

1/4 teaspoon black pepper

2 tablespoon mellow white miso

3 tablespoon orange juice

2 tablespoon lemon juice

2 tablespoon olive oil

1/2 teaspoon fresh ginger

3 scallions

2 medium cucumbers

1 small carrot

1/4 cup walnuts

 

Place the beans in a bowl. Add water to cover by 2 inches. Cover and let stand

overnight.

 

Drain the beans and place in a medium saucepan. Add water to cover by 2 inches

and bring to a boil over high heat. Stir in the pepper. Reduce the heat to low,

cover, and simmer, stirring, for 30 minutes, or until very tender.

 

Drain the beans and place in a serving bowl for 20 minutes.

 

Meanwhile, in a large bowl, whisk together the miso, orange juice, lemon juice,

oil, and ginger. Stir in the scallions, cucumbers, carrot, walnuts, and beans.

 

Let stand for 15 minutes to blend the flavors.
