Hello other Vegitarians,

I married an ovo-lacto vegitarian about 6 months ago and I am learning all the

sneaky ways animal products get into food (ex renit and gelatin). For my

wedding shower I asked for vegitarian recipes but only got 3 :-( I have been

making lots of pasta dishes because they are meat free, cheap, easy. But, our

waist -lines are increasing so I think I need to expand my vegitarian recipes!!

Here is one recipe I did get at my shower and we love it. It fits in my

cheap, quick, pretty easy, requirements:

you need:

1 green pepper (chopped small)

1 onion (chopped small)

1 tomato (chopped small)

saute all those in olive oil, add 1 and 1/2 cups chopped tofu, add some garlic

powder and soy sauce to the pan,

toast whole whate bread, put a slice of cheddar cheese on warm toast, add

drained tofu mixture to bread

eat soon, this isn't a good " make ahead dish "

tastes so rich. Easy to find recepies all over the net. I'll try send
