Recipe Request: Tofu Dip

I am looking for the Tofu Dip recipe that was in one of Christina Cooks book

(the one where she is wearing the fruit on her head)...I believe it is called

" Cooking the Whole Foods Way. " Anyway, there is a very yummy tofu dip for

veggies in that book... So if someone has that book, will you kindly look up the

recipe and post it - I would be most grateful. Thank you!

The only dip recipe in that book is:

 

Creamy Olive Dip

 

1/4 c Olive Oil

3-4 cloves Garlic, minced

8 ox firm Tofu, boiled 5 minutes and drained

Juice of 1 Lemon

Pinch of Sea Salt

10 - 12 Oil-cured Olived, pitted and minced

1/8 cup Capers, drained

 

Heat oil in small skillet over medium heat.

 

Add garlic and cook until fragrant, 1 - 2 minutes.

 

Place tofu, oil with garlic, lemon juice and slat in food processor

and puree until smooth.

 

Transfer to bowl and gently fold in olives nad capers.

 

Chill before serving.
