Today at the farmers market I found a terrific fresh sprouted bean mix (kidney/lentil/mung/blackeyed peas). Normally I would sprinkle these raw on salads, but today I cooked them: 2 1/2 cups fresh sprouted beans 1 medium onion, diced 1 clove garlic, minced 2 chipotle peppers and 2 tablespoons sauce from a can of Chipotles in Adobo Sauce 2 sprigs fresh thyme 1 sprig fresh oregano 1 teaspoon ground cumin 1 teaspoon no salt Cajun Seasoning mix 1 tablespoon File Gumbo (ground sassafras) 1 box (32 oz) no salt vegetable broth water to cover 1/4 teaspoon sea salt 2 tablespoons fresh lemon juice I threw all this into my medium sized Le Creuset pot and let it simmer over low heat for 2 1/2 hours, adding water to cover and stirring occasionally. I add the lemon juice during the last half hour as I use very little salt and find it helps enhance the taste. I served them over brown rice and topped with two tablespoons of Whole Foods brand Fire Roasted Salsa (there's a little salt in the salsa and I found it was just enough for the whole serving).
