Guest guest Posted January 28, 2008 Report Share Posted January 28, 2008 Ingredients 150 gm egg noodles; 6 Chinese dried mushrooms; 1 tbsp oil; 1 tsp sesame oil; 1 red and yellow bell pepper (deseeded and sliced); 125 gm fresh beans sprouts; 125 gm shitake mushroom (sliced); 125 gm fresh oyster mushroom; 1 tbsp Thai sweet chilly sauce; 1/4 cup fresh cilantro; 1 tbsp light soya sauce. Method Boil water in a sauce pan. Add noodles and cook until tender for about five minutes (for dried noodles). Drain and set aside. Place dried mushroom in a small bowl, add boiling water and allow it to soften. Drain and squeeze out excess moisture. Slice the mushroom, discarding thick steam. Warm oil over medium heat in a wok. Add bell pepper, bean sprouts and fresh mushroom. Stir fry until slightly softened. Add noodles, reconstituted mushrooms, chilli, soya sauce and stir fry for 2-3 minutes.
