I boiled 4 cups of water, added a spoonful of Better Than Bouillon, a thinly sliced carrot, handful of sliced nmushrooms, chopped celery, chopped 3 baby bok choys, handful of chard leaves chopped, 2 squeezed garlic cloves, 1/2 chopped onion, one turnip chopped, boiled all of it for 17 mins, added the udon noodles and a 1/2 cup of cooked leftover white rice, boiled 3 more minutes and enjoyed this in my BIG Japanese soup bowl with 1/2 block of diced bean curd on top and some toasted black sesame seeds and chopped nira! Nira is a Japanese chive that is a cross between a green onion, chive and garlic. here's a link, if you are in an Asian market please give them a try, they look like flat chives.
