Guest guest Posted January 23, 2008 Report Share Posted January 23, 2008 Dutch process cocoa has a more mellow flavor because it has had an alkali added to neutralize the acid so it will not react with baking soda. It is used a lot in baking for that reason. Glad you enjoyed your chili.
