Hi Amy,

 

They will work but the finished product will not have the same softness to the

filling. It will be much more on the hard side unless you cook the dates in

water and even then it just isn't the same all thought it is passable.

 

I have tried it both ways and there really is no comparison in the taste or

the finished product between dried and fresh. The fresh are so much better.
