Emeril's BALSAMIC SYRUP

 

3 cups balsamic vinegar

 

 

 

 

In a medium-saucepan, over medium heat, add the balsamic vinegar. Bring to a

boil and reduce to a

simmer. Simmer until the liquid reduces by 3/4, about 30 minutes or until

syrup-like consistency.

Remove from the heat and cool completely.

 

Yield: about 1/4 cup

ChupaNote: to make it sweet and hot: add 1/2 cup brown sugar and 1 T. red pepper

flakes. Sublime!

Unlike the pure balsamic syrup, you don't need to use a good vinegar since you

are flavoring it

brown sugar and red pepper; Cheaper the better!
