This is absolutely my FAVORITE dip in the whole world!! Everyone that's ever

tried it has asked for the recipe.

 

Vegan-ize this by using vegan mayo and vegan Parmesan cheese.

 

Great with crackers and veggie sticks.

 

 

*Hot Artichoke and Parmesan Cheese Dip

*

1 13.5 ox can artichoke hearts, packed in brine (save brine)

3 slices light Italian or other white bread

4 T. reserved artichoke brine

1/4 C mayo

1/3 C Parmesan cheese, finely grated and firmly packed

non-stick cooking spray

Oven @ 350 degrees

 

Lightly coat a 1 1/2 C. oven-safe dish with cooking spray.

 

In blender, combine bread, artichokes, 4 T. brine, mayo and cheese. Puree

about 1 minute to make a smooth paste. Add a bit more brine if too thick for

blender. Spoon into prepared baking dish.

 

Bake for 20-25 minutes. Allow to rest about 10 minutes before serving.

I have made the following vegan appetizers for parties (that were well

liked). I will list them and if any of them sound interesting, let me

know, I'll post more details. Some of them are a bit of work, some

are easy.

 

Baked Stuffed mushrooms

 

salad spring rolls with peanut sauce(Vietnamese or Thai)

 

Samosas (indian appetizers filled with potatoes) with mint tamarind

sauce. I make these in phyllo dough and bake them rather than the

traditional pastry that required deep frying.

 

Chips or baked tortilla strips served with salsa, guacamole, vegan

bean dip....

 

Fried green plantains with salsa

 

Olives, nuts, pickles.

 

Big platter with different fruit chunks

 

Baba ganoush (eggplant dip) and or hummus, served with cut veggies and

pita bread.
