Guest guest Posted January 20, 2008 Report Share Posted January 20, 2008 This week's lunch bowls are 3 Veg group recipes Deb's oven baked brown rice (already reviewed as delicious), Prevention Hot & Spicy Tofu from Chupa (YUM, spicy, semi-crispy, tasty & pretty), Mark's Killer Shitakes (except I used 3 large portis & tripled the marinade - wound up with extra marinade but the 'shrooms are delicious!!) Thanks you 3 for great lunches this week! Peace, Diane in the Asian folder: Prevention Hot and Spicy Tofu 3 tablespoons peanut oil 1 pound firm tofu, cubed 1 red onion, sliced 1 red bell pepper, sliced 1 green chile pepper, chopped 3 cloves garlic, crushed 1/3 cup hot water 3 tablespoons white vinegar 3 tablespoons soy sauce 1 tablespoon brown sugar 1 teaspoon cornstarch 1 teaspoon crushed red pepper flakes Directions: 1 Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes. 2 In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes. Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly. Serves: 4 Hands-OnTime: 10 Minutes Cooking Time: 12 Minutes Total Time: 22 Minutes Calories 305 (55% from fat; Fat 20.3g (sat 3.2g); Fiber 4.2g Protein 19.6g;Carbohydrate 16.3g; Cholesterol 0mg; Iron 13mg; Sodium 706mg; Calcium 797mg Source: RITALINCINDY For Prevention Healthy Recipes Formatted by Chupa Babi in MC: 11.09.06 in the 'shroom folder: Killer Shiitakes Mix in a bowl the following imgredients: 1/8 cup olive oil 1/8 cup sesame oil 4 to 5 tablespoons tamari or low sodium soy sauce 2 glugs (pours) and 1 splash of white wine Stir vigorously as the ingredients tend to separate. Set aside. Take a pound of fresh, whole Shiitake mushrooms. Cut the stems from the caps. Place gills facing up. Do not slice mushrooms. (The stems can be dried and used for a soup base or discarded.) Pour the above sauce onto the mushrooms and stir, making sure the gills become saturated with the sauce. In a 350 degrees oven, bake uncovered for 30 to 40 minutes. Or you can barbecue on an open grill. The smoky flavor makes it even better. Serve hot with rice, pasta, couscous, barley or whatever. Unbelievably good.
