These not only taste wonderful they are pretty in

color too!

Rosy Home Fries

 

4 to 5 medium potatoes, cooked until tender, then peel

& cubed

3 medium beets, steamed until tender, then peeled &

cubed

1 or 2 tbsps. oil

1 medium onion, chopped

1 red bell pepper, chopped

1/2 cup minced parsley or cilantro (I use cilantro)

3/4 tsp. salt

pepper to taste

 

Heat the oil in a large skilled over medium heat. Add

the onions and saute for 5 minutes, stirring often.

Add the potatoes and beets and saute for approximately

7-10 more minutes, stirring occaisionally until the

potatoes begin to brown slightly. Remove from the

heat. Toss in the red pepper, parsley, salt, and

pepper. Serve immediately.

Serves 6.
