I'm a single mother so its important to me to have some quick, easy, short-ingredient-list meals in my arsenal that even picky eaters will gorge on Ingredients: Package of whole wheat tortillas 1 can of vegetarian refried beans 1 can of old el paso enchilada sauce 1 bag shredded cheddar cheese or mexican 3 cheese mix (you can skip this if you are vegan) Melt a little smart balance in a pan on med/low heat Put a tortilla in the pan Smear half of the tortilla with beans, maybe 2 tbsp, just eyeball it Sprinkle cheese over the beans Spoon about a tablespoon of enchilada sauce over the beans and cheese Fold the tortilla in half (fold the half with nothing on it over the half where you put all of the other stuff) and cook until cheese is melted and tortilla is a light golden brown. Should just take a minute or two. Flip if necessary. Repeat until beans are gone. I cut them into triangles with kitchen scissors but you can use a pizza cutter. Serve with anything you want, chopped lettuce and tomatoes on the side, sour cream, salsa, or whatever they like. They will dissapear like hotcakes and they are pretty healthy if you don't overdo the cheese. And the only prep is opening cans!
