Guest guest Posted January 14, 2008 Report Share Posted January 14, 2008 After doing a roasted veggie dinner, cut up the cold, leftover veggies and make a veggie fritatta. This works as well with cold, leftover French fries. Veggie chili one night, Chili Mac (macaroni and cheese with chili) another night. Veggie chili one night, add tomatoes, lots of veggies, veggie broth and call it soup with a kick. Veggie chili turns into taco salad when served over a bed of greens with veggies of choice and served with tortillas or tortilla chips. Veggie chili turns a baked potato into chili baked potato. (Husband person loves lots of sour cream on his.) Veggie chili warmed and poured over French fries with grated cheddar or soy cheddar cheese-ish stuff is a good, messy chili fries dish that is lovely while watching a movie or the game. (ok, I admit, I am a fiend for football.) Slather veggie chili on corn tortillas, sprinkle with grated cheese, roll and pour either enchilada sauce or more chili over all, topped with more grated cheese, diced jalapeño peppers, sliced black olives and baked till warm makes a good enchilada casserole. We do a lot of chili, lol. I submitted several uses for leftover potatoes...think it is in the files. Leftover spinach mixed with sour cream and mushrooms, all whirred in processor or blender makes a tasty dip for raw veggies or chips. Leftover marinara sauce poured over cookie manicotti pasta filled with spinach, mushroom and ricotta cheese. Top with some grated mozzarella cheese. Leftover broccoli - make a thin white sauce, chop up the broccoli and toss it in - call it cream of broccoli soup. Works for carrots, too. Green peas with mushrooms and a medium thick white sauce makes a lovely dish by itself or poured over pasta. Make the sauce thinner and call it peas and mushroom soup. Leftover home made bread makes a good bread pudding or awesome French toast. Leftover biscuits are divine when fried in a little butter or margarine. Couldn't eat the other poached egg for breakfast? Chop it up and put it over a salad or mix with a little mayonnaise and pickle relish for a sandwich. Hard boiled eggs? Salad, sandwiches, casseroles...Cut a couple up, make a white sauce or Hollandaise, gently toss, bake in oven till done. Gentle on tummy food. The next night I'd add some chilli and paprika and a tin of kidney beans bubble for a bit and have as chilli with rice... The next night I'd take the chilli and use it in wraps which I would bake in the oven with cheese on top... Its amazing the different incarnations you can give things!
