Guest guest Posted January 13, 2008 Report Share Posted January 13, 2008 Red Lentil Hummus 1 cup red lentils 1 1/2 cups cold water 2 tablespoons olive oil 3 tablespoons other oil (ie flax, hemp) 1/4 cup lemon juice 1 to 2 cloves garlic, minced 1 teaspoon ground cumin 1/4 teaspoon salt Place lentils and water in a pot and bring to a boil, then reduce heat and let simmer 2 to 3 minutes. Remove from heat, cover and let stand for 12 to 15 minutes. (I usually let it simmer a few extra minutes to make a smoother dip.) Once the lentils are done, add all other ingredients and mix together. In a food processor, blend everything together till smooth.
