Hearts of Palm Spread

 

2 cloves Organic Garlic

2 cans Hearts of Palm, drained (14 ounces)

1/3 cup Extra Virgin Olive Oil, or more to taste

 

 

 

 

Smash garlic with the flat side of a chef's knife to peel. Place in a food

process and process to

a paste. Add hearts of palm and process to a rough puree. With motor running,

drizzle in oil in a

thin stream until mixture forms a fluffy, velvety puree. Add salt and pepper to

taste. Refrigerate

until ready to use.

 

Makes 4 cups (approx.)

ChupaNote: I used 1 T. roasted minced garlic (prepared), and added 1 teaspoon

red pepper flakes,

1/2 teaspoon white pepper, 1/4 teaspoon freshly ground black pepper, making it

very spicy. You may

want more oil. This is great, not only with raw veggies or chips, but over

pasta, or as a soup

base. And its as quick as your blender!
