Guest guest Posted January 10, 2008 Report Share Posted January 10, 2008 Feta or Chevre Stuffed Mushrooms Dipped in Marinara mushroom caps balsamic vinaigrette herb, peppered or plain chèvre or feta cheese Italian herbed bread-crumbs olive oil Wipe mushroom caps clean with a wet towel and marinate in Balsamic vinaigrette for at 1 to 2 minutes. Press bits of chèvre into prepared mushroom caps and then roll in Italian breadcrumbs. Place on a cookie sheet, spray or drizzle with extra virgin olive oil and place in the top rack of a 400 degree oven. Roast for 5 to 8 minutes or until sizzling and cheese starts to melt, holding under broiler if additional browning is desired.
