Feta or Chevre Stuffed Mushrooms Dipped in Marinara

 

mushroom caps

balsamic vinaigrette

herb, peppered or plain chèvre or feta cheese

Italian herbed bread-crumbs

olive oil

 

Wipe mushroom caps clean with a wet towel and marinate

in Balsamic vinaigrette for at 1 to 2 minutes. Press

bits of chèvre into prepared mushroom caps and then

roll in Italian breadcrumbs. Place on a cookie sheet,

spray or drizzle with extra virgin olive oil and place

in the top rack of a 400 degree oven.

Roast for 5 to 8 minutes or until sizzling and cheese

starts to melt, holding under broiler if additional

browning is desired. Serve with warm marinara sauce

for dipping.
