Hi Amanda

Happy New Year. Sorry for the delay in replying - I'm not really

managing to keep up with all the posts at the moment. I have a similar

steamer. I use mine several times a week, mostly to cook grains, to

steam veggies and to heat up stews - that way I get to use all 3

tiers :-) I bought a little book in steaming but it has very few

vegetarian recipes. I don't believe that you could cook beans or

lentils in a steamer because I think they would really need to boil. I

see there are lentil recipes in the Rice Cooker folder in the files but

I am uncertain whether they would work in a steamer. Here is a recipe

that I really enjoyed which I posted here some time ago.

Steamed Bulgar Wheat with Herbs and Lemon

 

2 Tbsp olive oil

250g/9 oz bulgar or cracked wheat

1 medium red onion, finely chopped

500ml/18 fl oz hot vegetable stock

1Tbsp finely chopped fresh mint or 1 tsp dried

1Tbsp finely chopped fresh oregano or 1 tsp dried

25g/1 oz sultanas (golden raisins)

1 lemon

Salt and freshly ground black pepper

 

Put the oil in a bowl that will fit into your steamer. Stir in the

bulgar wheat and the onion. Pour over the hot stock, add the herbs and

the sultanas and stir well. Leave to stand for 10 minutes. Grate the

rind and squeeze the juice from half of the lemon. Add rind and juice

to the bulgar wheat and season with salt and pepper. Put the uncovered

bowl into the steamer and cover with the lid. Steam for 20-25 mins or

until the bulgar is tender, stirring half way. Tip into a warmed

serving bowl, fluff up with a fork. Serve with the other half of the

lemon cut into wedges.

 

Substitutions:

I'm not terribly fond of sultanas in savoury dishes and felt I needed a

bit more protein today, so I used a handful of canned chickpeas in

their place.
