Guest guest Posted January 7, 2008 Report Share Posted January 7, 2008 I make the pizza with flours and I add small amount of sugar, add yeast I did in warm water, add the spices and mix.It is not as stiff as some but it will work. Then add the sauce and meat veggies cheese. I make enough dough for about 4 pizzas single size but not sure the measurements due to never measure much for anything... I also use Xanthan gum but most times don't use it..it does help... here are some recipes tried and true and I am sure I will have more potato pizza base 6 oz (175g) cooked and cooled mashed potatoes (i use sweet potatoes as they taste better) 6 oz (175g) gf flour mix (i cannot get tapioca flour or use potato flour so i just use chickpea flour here or rice flour) 2 tsp gf/cf baking powder 1 tsp xanthan gum 1/2 tsp salt 2 tbsp sunflower oil 2 fl oz (50ml) gf/cf milk alternative (BL suggested i add 2 medium eggs if the mixture is not sticky enough) 1, Pre heat oven to GM7, 425F, 220C 2, Mix together the flour, baking powder, xanthan gum and salt 3, Stir in the mashed potato and mix in well 4, Make a well in the centre of the mixture and add the water and oil 5, Combine all the ingredients together until a dough has been formed 6, Knead the dough for 2 minutes 7, Press the mixture down well into ann 8 " (20cm) round baking tray or sandwich tin 8, Cover with sauce and toppings of choice 9, bake for 30 mins and this new recipe is excellent Potato-Free and Tapioca-Free GF Pizza Crust (based on Bette Hagman's Original Pizza Crust Recipe) 2 cup Cornstarch 1/2 cup Milk Powder (ie like Dari-Free or Miss Roben's Powdered Rice Milk) 3 tsp Baking Soda 1 tsp fumeric acid (this not commonly available but if tolerate sub Cream of Tartar) 1/2 tsp Sea Salt 2 Tb Vegetable Shortening 3/4 cup Water Preheat over to 400°. Grease 2 cookie sheets or 2 pizza pans, set aside. In a mixing bowl, place the flour, baking soda and salt. Cut in shortening, rubbing with the fingers until it feels like cornmeal. Pour in water and stir until dough clings together in a ball. Work with hands, kneading dough until smooth. Form into 2 balls. Place each ball on the center of prepared pans and cover each with plastic, press out into a 10 inch circle about 1/4 inch thick except at the edges, which should be about 1/2 inch thick to contain the sauce and fillings. Repeat with the second ball. Fill with desired sauce and toppings. Bake 20 to 22 minutes. Yield: 2 pizza crusts approx 10 " FYI, Fumeric acid is commonly used in hypo-allergenic foods for people who cannot tolerate grapes or wine byproducts. It is a naturally occurring compound and is cousin to malic acid, used in candy making to add sourness. In this recipe it acts as an acid for the soda, to cause the chemical reaction necessary to produce rise.
