Guest guest Posted January 6, 2008 Report Share Posted January 6, 2008 Southwestern Black Bean Pizza Try this southwestern pizza recipe - use salsa instead of marinara and top with corn and black beans. Optionally, spice it up with jalepenos. Prep time: 15 min; Total time: 30 min Ingredients * 1 pizza crust (I make my own pizza crust) * 1/2 c. salsa * 1/4 c. black beans, drained and rinsed * 1/4 c. organic corn * 1/4 c. jalepenos or other peppers (optional) * 1/4 c. mozzarella, to taste (optional) Any pizza tastes best if it is made with a pizza stone. If you have one, place it on the bottom of your oven (or on the bottom rack if the bottom has coils) and heat it to 450 F for 15 minutes. During this time, assemble your pizza. Begin with your crust. I make my own crust so at this stage it is still raw dough - you may need to adjust your recipe accordingly if you use a ready-made crust (the package should have instructions). Instead of pizza sauce, use salsa. Spread a thick layer of salsa on the pizza crust. Once the pizza crust is coated thickly with salsa, sprinkle grated mozzerella cheese on the pizza if you are using it. Last, add the corn, black beans, and jalepenos. Bake on the pizza stone for 12-15 minutes at 450 F. Tips If you wish to use dried beans, boil them for 5 minutes the night before you make your pizza. Then drain the water. Soak the beans overnight, changing their water once. Discard the soak water and cook them in a pressure cooker for 10-12 minutes. Then they are ready for pizza. If you are dining with omnivores, they can add chicken if they want. If you are not vegan, try using pepper jack cheese or cheddar instead of (or in addition to) mozzarella. Add other veggies to your pizza if you wish - try tomatoes, avocados, and olives. To add protein (and flavor!), spread a layer of fat free refried beans on the pizza crust before adding the salsa.
