45 Minute Vegetable Stock - 0 pts, 7g carbs, 2g fiber

Amount Measure Ingredient -- Preparation Method

1 clove garlic -- 1-1/2 inch long

1 onion -- peeled and chopped

1 celery rib -- chopped

2 carrots -- peeled and sliced

1 zucchini -- peeled and sliced

1/4 cup chopped fresh parsley

1 parsnip -- peeled and sliced

10 cups water

 

Combine all ingredients in a large pot. Simmer, covered, for 45 minutes.

 

Strain broth.

 

Makes 2 quarts (8 one-cup servings).

 

One cup serving: Calories 29; Total Fat 0g (sat fat 0g); Fiber 2g; Carbs 7g;

Chol 0mg; Protein 1g;

Sodium 13mg.

 

 

ChupaNote: this is pretty bland. Next time I'll zip it up with more garlic,

onions, some salt, and

a good dose of red pepper flakes. Or I'll put the whole thing in a slow cooker,

and let it

cookdown over night to intensify the flavors. If you like a delicate stock, this

is the one for

you.
