Hearty Barely Bake - a success story

I made the Hearty Barley Bake today and it was a rip roaring success. I have

always believed that I don't like barley. I think the last time I had it was 20

years ago in beef and barley soup and it was probably the beef that I was not

liking. That was just about when I gave up on meat for good.

 

My husband has always said that he loves barley and misses it but when I told

him I was making barley without soup..........well he wasn't too sure about that

as a good choice. He could not imagine barley as a side dish.

 

We both loved it. I'm working on losing weight so carefully calculated the

calories and measured out a serving that I felt was appropriate for my healthy

eating plan. I have to admit that if this had been a pre-weight loss period of

time, I would have eaten a whole plate full. I am going to freeze portions of

it to safeguard it from me or is that safeguard me against the barley.

 

I chickened out and did it in the oven but I think that was probably a better

choice for me. Since the lid on my rice cooker locks shut, I would have been

paranoid about what the barley was doing. this way I could peek every once in a

while. I did find that it cooked quicker than expected. I think it was cooked

in about 50 minutes but then my oven tends to be a bit hotter than it should be.
