Guest guest Posted January 4, 2008 Report Share Posted January 4, 2008 Orange Blossom Carrots * 2 pounds baby carrots * 1/4 cup melted butter * 1/4 cup brown sugar * 1/4 cup frozen orange juice concentrate, thawed * 1/2 cup mandarin orange pieces * 1/2 teaspoon salt * Pinch of cinnamon Preheat oven to 350 degrees. Butter a 1 1/2-quart baking dish. Cook carrots until tender; drain. Place in prepared baking dish. Combine butter, brown sugar, orange juice concentrate, mandarin orange pieces, salt and cinnamon; pour over carrots. Cover and refrigerate overnight. Remove from refrigerator at least 30 minutes before baking. Turn to recoat carrots with sauce. Bake, uncovered, for 20 to 25 minutes, or until thoroughly heated. Serves 4 to 6.
