I reconstitute the same as the small TVP and add spices etc. I have a good recipe that should be in the TVP folder. I order a lot of my dried goods online, and I received these kibble-sized pieces in my package instead of the flakes I ordered. But I think I'd actually like to try them. Go to the recipe files and click on substututes folder and open the soy based recipe folder. There are recipes for TVP Tempeh, etc. If you don't see my recipe for the chunks I will write it out when I get home for you. I have used the large chunky pieces to make stews and the smaller chunks for chili's etc. To reconstitute I put them in water and heat to boiling in the microwave, then let them soak until tender. I then put them in my stew (or whatever) making sure the recipe has lots of liquid. They are very good, and take on the flavor of your recipe. I am back from my holidays and have hundreds of emails from the group, which i will love reading now next few cold days in sunny SF. I cook all my lentils and vegetables in pressure cooker. Pressure cooking does several things. It takes less time, and lots of important vitamin and minerals which get lost in cooking stay intact. and you can cook in very little oil. Some food need to be simmer for which, after one pressure i cook on slow for few extra minutes then turn of the heat but leave the lid on till all the steam is out. This way the food like chick peas and saag (mustard and other green etc) taste lot better then quick cooking. CHICK PEAS .................. Ingredients.... chana masala (available in Indian store), if you can't get the chick peas masala i will write all the spices you can use instead. 2 cans of chick peas (any brand will do. less softer are better) one large onion 2 large tomatoes half inch size ginger 2 colve garlic Fresh cilantro half cup (thinly chopped) Chop onion, ginger, garlic and keep aside. cut up tomatoes. in a midiam size pan heat the oil and put 1/4 spoon cumin seeds(oil shoul be hot enough for cumin seeds to turn darker, lower the heat and add onion, garlic and ginger,cook until onion gets pink. Add tomatoes and cook till tomatoes get mixed nicely in onion add 2 spoons of chana masala and salt mix well and add 4 cups water, cover and cook for 20 min on low heat. Now add cilantro and mix well, break some chick peas while stirring. serve hot with naan, Rice or eat with bread. Nina --- " J.
