1/2 cup all purpose flour

2 large eggs -- lightly beaten

1 cup water

1 tablespoon olive oil

1 1/2 cups crumbled feta cheese

freshly ground black pepper

 

In a medium bowl, beat the flour and eggs with a whisk or an electric mixer

until blended, then

gradually beat in the water. Cover and let stand for at least 30 minutes, or up

to 2 hours.

 

Preheat the oven to 400F. Coat an 11x7-inch or other 1 1/2 quart baking dish

with the oil.

 

Stir 1 cup of the cheese and pepper to taste into the batter. Pour the batter

into the baking dish

and sprinkle the remaining 1/2 cup cheese and more pepper over the top. Bake for

30 minutes, or

until the top is golden brown and the sides are pulling away from the dish. Cut

into squares and

serve warm or at room temperature.

 

Serves 4 as a starter, or 2 as maindish.

NOTES : Tiganopita is the name used for various quick Greek flatbreads that are

fried on top of

the stove or cooked on the hearth. They are usually made with bread dough and

topped with cheese

and dried herbs. This particularly easy tiganopita from Chios is made from a

simple egg batter. It

can be eaten warm or at room temperature, served in the pan in which in was

baked. Cut it into

squares and offer it as an appetizer or as the main course of a light lunch,

accompanied by a

green salad.
