I survived an aortic rupture in June, and since then, meat has taken on an unpleasant taste to me. I am slowly transitioning it from my life, but I don't know how to go about cooking veggie dishes, and I don't have lots of recipes, so I'm starting my quest. You are lucky to have survived your rupture. My aneurism was found before it ruptured, but I have had to have stenting twice in 3 years. I remember how hungry I was for the first 3 days after I quit eating meat. I did not know what to eat because I won't eat tofu! Now it is easy, but I started with regular recipes for casseroles and pasta dishes and just left out the meat. If you are looking for that kind of chewy texture of meat in dishes, substitute diced portabella Mushrooms. Check out the recipies in our files. You won't know what you want to eat first. If you like mexican, try the Cuban Cigars. If you like lentiles try Jacobs Pottage, If you like Italian there are lots of scrumptious pasta recipies. Have fun.
