The easy way to peel a butternut is to cut it horizontally into rings

along the top. Take the bottom with the seeds and quarter it. Scoop

out the seeds. Now take each piece and use a vegetable peeler to zip

off the skin.

 

I usually buy organic squash and leave the skin on for long cooked

dishes. The skin softens and is very tasty.
