Guest guest Posted January 2, 2008 Report Share Posted January 2, 2008 GINGER GREEN BEANS Yield: 5 servings Source: " The Complete Diabetes Prevention Plan " INGREDIENTS - 1 tablespoon canola oil - 4 cups 1-1/2 inch pieces fresh green beans - 2 tablespoons water - 1 medium-large yellow onion, thinly sliced - 1/2 teaspoon ground ginger - 1 teaspoon crushed garlic - 2 tablespoons light teriyaki sauce DIRECTIONS Place the oil in a large nonstick skillet. Add the green beans and water and place over medium heat. Cover and cook for 4 minutes, shaking the pan occasionally. Add the onions, cover, and cook for an additional 4 minutes, until the green beans are tender and the onions are lightly browned. Add a little more water during cooking if needed, but only enough to prevent scorching. Add the ginger, garlic, and teriyaki sauce. Cover and cook over low heat for a minute or two to blend the flavors. If necessary, cook uncovered for a minute or two to evaporate any excess liquid. Serve hot.
