Puttanesca Sauce - 3 pts, 14g carbs, 3g fiber

Amount Measure Ingredient -- Preparation Method

2 cups canned crushed tomatoes

1/4 cup kalamata olives -- chopped, or green olives

2 tablespoons capers

4 cloves garlic -- sliced

1 tablespoon chopped fresh basil -- OR 1/2 t. dried basil

1/2 teaspoon crushed red pepper flakes

1/2 teaspoon dried oregano

2 tablespoons light miso

2 tablespoons chopped fresh parsley

2 tablespoons pine nuts -- toasted

 

Combine the tomatoes, olives, capers, garlic, basil, red pepper flakes, and

oregano in a

medium-size saucepan and bring to a boil over medium heat, stirring

occasionally. Reduce the heat

and simmer gently for 10 minutes. Remove from the heat.

 

In a small bowl, combine the miso with a little of the hot tomato sauce,

stirring until the miso

melts into the sauce. Add the miso to the saucepan along with the parsley.

 

Cover the saucepan and let sit for 5 minutes before using. If desired, sprinkle

the toasted pine

nuts on top of the sauced dish at serving time. Can be stored in the

refrigerator for up to 5

days. Rewarm over low heat, stirring, until hot. Do not boil, as this will

diminish the value of

the miso.

 

Makes 2 cups.

 

 

 

VARIATION

For a lighter sauce, replace the crushed tomatoes with lightly drained and

chopped canned whole

tomato pieces.

beans, mushrooms,

and squash. Two cups of sauce is enough for one pound of pasta.
