Nikki's Country Greens - 0 pts, 11g carbs, 3g fiber

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds Swiss chard -- red or white

6 ounces cremini mushrooms

1/3 cup sliced shallots

2 tablespoons lemon juice

salt

freshly ground black pepper

 

Remove the tough stems form the Swiss chard, and cut the leaves crosswise into

1/2-inch wide

strips. You should have about 12 cups. Set aside.

 

Slice the mushroom caps and stems. You should have about 2 cups.

 

In a pot large enough to hold the greens, cook the mushrooms over medium heat,

stirring

occasionally to prevent sticking, for 5 to 8 minutes, or until they wilt and

release their juices.

 

Add the shallots to the pot, and cook for 1 to 2 minutes.

 

Add the greens to the pot, and mix until they begin to wilt and cook down.

(Tongs and chopsticks

are both good tools for this job.)

 

Cover the pot and cook over low heat for 5 to 10 minutes, or until the greens

are tender.

 

Remove the pot from the heat, stir in the lemon juice, and season with salt and

pepper to taste.

Serve hot.
