Millet Polenta - 3 pts

Amount Measure Ingredient -- Preparation Method

4 cups water

1 cup millet

1/2 teaspoon salt

2 cloves garlic -- minced, optional

salt

freshly ground black pepper

 

Bring the water to a boil in a medium-size saucepan. Stir in the millet, salt,

and garlic, if

using, and reduce the heat to a simmer. Cover and cook for 20 minutes.

 

Uncover the saucepan and, stirring frequently, continue to cook for 10 to 15

minutes, or until the

polenta becomes thick and has a soft, creamy texture.

 

Season to taste with additional salt and freshly ground pepper before serving.
