Stir in the millet, salt, and garlic, if using, and reduce the heat to a simmer. Cover and cook for 20 minutes. Uncover the saucepan and, stirring frequently, continue to cook for 10 to 15 minutes, or until the polenta becomes thick and has a soft, creamy texture. Season to taste with additional salt and freshly ground pepper before serving. Makes 4 servings.
