Sweet Onion Gravy - 2 pts, 18g carbs, 4g fiber

Amount Measure Ingredient -- Preparation Method

2 cups coarsely chopped red onion -- OR sweet white onion

2 tablespoons sherry

1/4 cup whole wheat flour

2 cups soy milk

2 tablespoons light miso

freshly ground black pepper

salt

 

Combine the onions and sherry in a small saucepan. Cover and cook over low heat

for 8 to 10

minutes, or until the onions are quite tender.

 

Sprinkle the flour over the onions, and stir until evenly mixed. Gradually stir

in the soy milk

and cook over medium heat, stirring continuously, until the gravy thickens and

begins to boil.

Reduce the heat and simmer gently for 1 minute.

 

Remove the saucepan from the heat and stir in the miso until thoroughly melted.

Season with a

generous amount of freshly ground pepper and salt to taste, if desired. Serve

immediately or store

in the refrigerator for a day or 2. Rewarm over low heat and cook gently, while

stirring, until

warm. Do not boil.
