Nikki's Tofu Jerky - 1pt, 2g carbs, trace fiber

Amount Measure Ingredient -- Preparation Method

1/4 cup soy sauce

1/4 cup water

2 tablespoons lemon juice

1 tablespoon grated gingerroot

1 teaspoon honey -- molasses, or maple syrup

1 clove garlic -- minced

1 pound firm tofu -- or extra firm tofu, sliced 1/8 inch thick

 

Combine all the ingredients except the tofu in a shallow pan (or two) large

enough to hold the

tofu in a single layer.

 

 

Arrange tofu slices in the soy sauce marinade, turning to coat both sides. Cover

the pan and allow

the tofu to marinate in the refrigerator for several hours, or even overnight.

Turn a few times

for maximum penetration.

 

 

Remove the tofu from the marinade, discarding the marinade.

 

For oven drying: Set the temperature to 200F, place the tofu pieces on a wire

rack (such as a cake

cooking rack or grilling rack), place the rack on a baking sheet, and place in

the oven.

 

If drying in a dehydrator: Place the tofu on trays and set the temperature to

about 140F. Keep the

tofu in the oven or dehydrator until it is very chewy, but not crisp. The drying

time is 4 to 6

hours, but this will vary somewhat depending on the tofu, the drying method

used, and even the

ambient room condition.

 

 

Store in airtight containers, where it will keep for months.

NOTES : Tofu jerky makes a flavorful nibbling food or snack. The basic recipe

can be spiced up by

adding hot sauce or a good pinch of cayenne pepper. Chili powder makes a chili

jerky, oregano and

basil create pizza jerky.
