Creamy Walnut Pesto - 2 pts, 7g carbs, 1g fiber

Amount Measure Ingredient -- Preparation Method

1/4 cup walnuts

2 cups herbs -- or greens of choice, such as fresh basil,

parsley, arugula,

spinach, individually or in combinations

2 cloves garlic -- chopped

1/4 teaspoon salt

1/4 cup yogurt cheese

1 tablespoon light miso

 

Place the walnuts in a food processor, and process until well ground.

 

Add the greens, garlic, and salt, and puree to a thick paste.

 

Add the yogurt cheese and miso, and process once more to a smooth thick sauce.

Serve immediately,

or store for up to 3 days in the refrigerator.
