Nikki's Moroccan Carrot Slaw - 1 pt, 8g carbs, 2g fiber

Amount Measure Ingredient -- Preparation Method

2 cups shredded carrots -- (4 to 5 medium carrots)

1/2 cup chopped fresh cilantro -- and/or flat leaf Italian

parsley, loosely packed

3 tablespoons orange juice

1 tablespoon olive oil -- flaxseed oil, or hemp oil

1/2 teaspoon paprika

1/4 teaspoon ground cumin

1/8 teaspoon cayenne pepper -- or more to taste

1/8 teaspoon salt

 

Place the carrots in a serving bowl and set aside.

 

Combine all of the remaining ingredients in a blender or food processor and

puree.

 

Pour the dressing over the carrots and toss well to mix.

 

Serve at once, hold for 1 to 2 hours at room temperature, or refrigerate for up

to 2 days.

 

 

Serve 4.
