Three Grain Polenta Bread - 4 pts

Amount Measure Ingredient -- Preparation Method

3/4 cup cornmeal

2 tablespoons soy flour

2 tablespoons flaxseed meal

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups plain nonfat yogurt

1 tablespoon maple syrup

1 teaspoon canola oil

 

Preheat oven to 400F.

 

Combine the dry ingredients in a medium-size bowl. Add the yogurt and maple

syrup and mix gently

but thoroughly, until the dry ingredients are completely moistened.

 

Pour the oil into an 8-inch square baking pan and place in the oven for 2 to 3

minutes, until hot.

 

Spread the batter in the hot pan and bake for 30 minutes, or until the edges are

lightly browned.

Cut into squares to serve.
