Creamy Tofu Ranch Dressing - 1 pt, 3g carbs, 1g fiber

Amount Measure Ingredient -- Preparation Method

8 ounces soft tofu

1/2 cup diced peeled cucumber

2 tablespoons lemon juice

1 tablespoon cider vinegar

1 tablespoon prepared mustard

2 teaspoons light miso

1/2 teaspoon turmeric

1 clove garlic

1/2 cup soy milk

 

Combine all the ingredients except the soy milk in a blender or food processor,

and puree until

evenly blended.

 

 

Gradually add the soy milk and process to a smooth, creamy, pourable

consistency.

 

 

Use immediately or store for up to 4 days in the refrigerator.

 

 

Makes 1 3/4 cups.
