Amount Measure Ingredient -- Preparation Method

1 cup chopped plum tomatoes

2 cups chopped cucumber

1/4 cup minced scallions

1/4 cup minced fresh cilantro -- or flat leaf Italian parsley

1 jalapeno chile pepper -- seeded and finely chopped

1 tablespoon lemon juice

1/2 teaspoon salt

 

Combine all the ingredients in a serving bowl, tossing well to mix.

 

Serve immediately or refrigerate for up to 3 days.
