Lemon Tahini Dressing - 3 pts, 6g carbs, 1g fiber

Amount Measure Ingredient -- Preparation Method

1/4 cup tahini -- (sesame seed paste)

1/4 cup lemon juice

1/4 cup water

1/3 cup plain nonfat yogurt -- or plain lowfat yogurt

1 teaspoon soy sauce

1/4 teaspoon salt

 

Place the tahini in a small bowl, and use a fork or whisk to beat the lemon

juice into the tahini.

 

Gradually beat the water into the tahini mixture until creamy. Then stir in the

yogurt, soy sauce,

and salt.

 

Use immediately or store for up to 1 week in the refrigerator.

 

Makes 1 cup (4 quarter cup servings).

 

 

 

VARIATION

To add vegetables to the dressing, combine all the ingredients except the yogurt

in a blender or

food processor. Add 1 scallion or 1 onion slice, 1 small celery stalk with

leaves, and 1 wedge of

green pepper. Process until the vegetables are integrated into the dressing.

Stir in the yogurt.

NOTES : This is a basic dressing that can be modified in a number of ways. For

example, you can

add 1 T. of minced fresh dill or parsley and/or a chopped clove of garlic. Or

you can add a few

vegetables and prepare it in a blender or food processor.
