Gradually beat the water into the tahini mixture until creamy. Then stir in the yogurt, soy sauce, and salt. Use immediately or store for up to 1 week in the refrigerator. Makes 1 cup (4 quarter cup servings). VARIATION To add vegetables to the dressing, combine all the ingredients except the yogurt in a blender or food processor. Add 1 scallion or 1 onion slice, 1 small celery stalk with leaves, and 1 wedge of green pepper. Process until the vegetables are integrated into the dressing. Stir in the yogurt.
