Omnis like it too; I serve it every year at my fantasy football draft and the meat-eating guys wolf it down. Peace, Diane Veg-Head Three-Bean Chili 1 tablespoon (2 turns around the pot) olive or vegetable oil 1 medium yellow skinned onion, chopped 1 large red pepper, seeded and chopped 1 large jalapeno pepper, seeded and chopped, optional 1 or 2 canned chipotle chilis, minced 4 cloves garlic, crushed and chopped 1 cup vegetable stock/broth 1 (32- ounce) can crushed tomatoes 1 (14-ounce) can black beans 1 (14-ounce) can white beans 1 tablespoon ground cumin 2 tablespoons chili powder 1 (14-ounce) can spicy vegetarian refried beans Throw everything in the crockpot all day on low. Removing the lid for the last hour will make a thicker chili. Toppings: Shredded spicy monterey jack or smoked cheddar Chopped scallions, whites and greens Diced fresh seeded plum tomato Blue and red corn tortilla chips or black bean tortilla chips, for dipping , " snella1 " <snella1 wrote: > > I received a slow cooker for Christmas and am anxious to put it to > work. But, I don't have a written recipe for it...so no specific measurements. Along with the regular ingredients I add : diced zucchini diced yellow squash corn diced tomatoes with green pepper and onion soy protein Crumbles (Morningstar Farms or Boca) sometimes I add green beans I use a package of McCormicks chili seasoning It makes a huge pot of chili and everyone loves it. -- Bj.
