Favorite slow cooker recipes - Veg-Head Three-Bean Chili

This is one of my faves Snella. Omnis like it too; I serve it every

year at my fantasy football draft and the meat-eating guys wolf it down.

Veg-Head Three-Bean Chili

 

1 tablespoon (2 turns around the pot) olive or vegetable oil

1 medium yellow skinned onion, chopped

1 large red pepper, seeded and chopped

1 large jalapeno pepper, seeded and chopped, optional

1 or 2 canned chipotle chilis, minced

4 cloves garlic, crushed and chopped

1 cup vegetable stock/broth

1 (32- ounce) can crushed tomatoes

1 (14-ounce) can black beans

1 (14-ounce) can white beans

1 tablespoon ground cumin

2 tablespoons chili powder

1 (14-ounce) can spicy vegetarian refried beans

 

Throw everything in the crockpot all day on low. Removing the lid for

the last hour will make a thicker chili.

 

Toppings:

Shredded spicy monterey jack or smoked cheddar

Chopped scallions, whites and greens

Diced fresh seeded plum tomato

Blue and red corn tortilla chips or black bean tortilla chips, for dipping

Hi, I am new to the group and want to add to your yummy recipe. I make a veggy

chili that is so good. But, I don't have a written recipe for it...so no

specific measurements.

Along with the regular ingredients I add :

diced zucchini

diced yellow squash

corn

diced tomatoes with green pepper and onion

soy protein Crumbles (Morningstar Farms or Boca)

sometimes I add green beans

I use a package of McCormicks chili seasoning

 

It makes a huge pot of chili and everyone loves it.
