Guest guest Posted December 30, 2007 Report Share Posted December 30, 2007 * Exported from MasterCook * Celery Root Skordalia to be served with Roasted Beets - Greek - 5 pts, 2g carbs, 1g fiber Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : LowerCarbs Veggie WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Beets -- roasted and peeled (amount to taste) 1 celery root -- softball sized (1 cup cooked and pureed) 6 tablespoons olive oil Salt 3 cloves garlic -- (3 to 5) 1 tablespoon white wine vinegar Preheat oven to 350°F. Cut off the bottom and top of the celery root. Place the celery root flat on a cutting board and use a sharp knife to remove all the peel and gnarly roots. Cut the peeled celery root into six wedges. Cut out any soft spongy matter from the center of the celery root. Toss the celery root with salt and 2 tablespoons olive oil, and place in an aluminum foil packet, making sure the seams of the packet are sealed tightly. Put the foil packet on a baking pan. (If you are making the beets, you can bake them at the same time in a separate foil packet.) Bake for 45-55 minutes, or until the celery root wedges are tender all the way through. Place the baked celery root and olive oil in the food processor and puree. Puree the garlic by mashing it into the salt. Thoroughly mix the pureed garlic, vinegar, and the remaining olive oil into the celery root. Taste and add salt, garlic, vinegar, or olive oil, if needed. Serve with roasted beets. Or by the spoonful.
