Incentive to Cook

There are days when I also do not feel like cooking. On the days that

I do I always fix a double batch of lasagna,rice casserole,soup, etc.

and freeze part. When you are just tired, busy, or not in the mood

for cooking this is the time your body needs a nutritious hot meal.

Easy to pop that frozen stew, etc. in the microwave or oven for a

quick satisfying meal. Most of us get tired of the same recipe after

the second day anyway. I always fix more than I will eat at one meal.

Sometimes I have leftovers the next day. If I am on the run out and

about during the day I take my 'meal' with me in a thermos and lunch

bag or back pack. A stop-over at the Nature Trail or park with my

lunch is a great stress reliever. This works good in the summer when

it's really too hot in the kitchen to cook. My favorite then is pasta

salad.

It's easy to get into the dish of cold cereal and sandwich habit. Not

that it's all that 'bad' for you it is just not satisfying.

Sometimes an incentive to cook is an elder neighbor,family member or

work mates, who don't have time or cannot cook for themselves.

Prepare enough for several of you so we can freeze some and they can

easily re-heat . It is just as easy to double a recipe as it is to

make it for one.

I really do understand the inability to get yourself together to cook.

I'm the kind of person who can subsist for days on cheese sandwiches and

cold cereal. When I'm in that mode, boiling up some pasta and dumping

jarred sauce on top with pre-shredded parmesan is " cooking " and even

that can be too much.

 

2007 was my year of getting healthy. I lost a bunch of weight and got

my type 2 diabetes under such good control that I reversed it.

Sometimes throughout this year I have been in " cooking mode " . When I'm

in that mode, I cook up a big recipe (or two or three) on Sunday that

lasts me throughout the week. I also freeze what I can, but I don't

have much freezer capacity. So I eat the prepared food through the week

plus my staples.

 

My staples are easy and quick to fix: green smoothies and giant salads

with beans. When I'm in " non-cook " mode I eat green smoothies, salads,

and maybe some oatmeal. I also buy an Ezekial cereal that I have with

rice or oat milk and a few dried cranberries. I don't do that every

day, however. (I eat very few grains in general and I really have to

watch the dried fruits.)

 

You just have to find what works for you - even " non-cooks " can get

healthier and lose weight. :-)

P.S. Last night I made the Smashed Pea Soup with Barley that I've

posted. Except for the very fattening lasagna and mashed potatoes I

made for Christmas Eve, this is the first cooking I've done since

Thanksgiving!!

Do you have to use a strong blender for green smoothies? My blender

wouldn't blend up the spinach when I tried to make one the other day. I

used my food processor but it didn't really make a drinkable smoothie,

rather a spoonable smoothie. I really don't want to spend a lot of

money on a blender but want to do green smoothies.
