Classic Peanut Butter Cookies

 

This recipe is one that I have had in my files since I was a kid and started

collecting recipes. I do not know why but these always turn out hard.. I love

them and can soften them up by sticking them in the microwave for 10 seconds or

so but not everyone wants to do that.. I did make these but only gave away half

of them because I felt bad that they ended up so hard.

1 cup Shortening 1 teaspoon

Vanilla

1 cup creamy peanut butter

1 cup granulated sugar

1 cup brown sugar, firmly packed - I used light

2 eggs

3 cups all-purpose flour

1 teaspoon baking powder

1 1/2 teaspoons baking soda

1/8 teaspoon salt

 

Preheat oven to 350 degrees, Grease or spray cookie sheet ( I spray them).

 

In a large bowl - Cream together shortening, vanilla, and sugars together. Add

eggs and beat well. In another bowl comine the Peanut butter, flour, salt and

baking soda. Add to the sugar mix combining thoroughly.

 

Form into tiny balls with hands, place on cookie sheet and flatten with fork and

make x design..

 

Bake 8 to 10 minutes or until firm
