Guest guest Posted December 27, 2007 Report Share Posted December 27, 2007 Hello everyone. I have been lurking for a few weeks and taking note of all of the excellent recipes. I am a vegetarian of one month, previously a huge omni. I have decided to go vegetarian primarily for health reasons as diabeties, high blood pressure, a variety of cancers, and heart disease are common on both sides of my family. I figure I've had 22 years to eat however I wanted to, so now it's time to get serious and think about the future. I'm slowly trying new fruits and veggies that I never gave a chance earlier. I still can't handle mushrooms, but I enjoy mushroom soup so I think it's probably the texture that I can't " stomach. " Either way, I'm still learning and trying, so that's good. I've always loved to cook, and I'm one of the few male members in my family (and circle of friends) that can actually bake, so that has only helped me more. I have plans on going Vegan soon, and since I've found giving up meat really hasn't been a problem, I have started to give up eggs, milk and milk products, with the exception of cheese. I'll do it eventually, but I'm one of those people that put cheese on everything, so it's weird tasting things without it. In some ways I used cheese to cover the tastes I think. I can't wait to learn new techniques and recipes. After I tried soymilk and found I actually liked the taste better than regular milk, the sky is the limit!
