Guest guest Posted December 26, 2007 Report Share Posted December 26, 2007 TORAI MASALA - SPICED ZUCCHINI & PEAS IN TOMATO SAUCE 1/2 cup chopped red onions 3 garlic cloves, minced 1 celery rib, sliced 2 tbsp. oil 1/2 tsp. turmeric 1/2 tsp. cumin powder 3 cups cubed zucchini 2 1/2 cups tomato sauce 1 cup frozen peas 3 pinch cayenne pepper Saute onions, garlic, and celery in oil for 2 minutes. Add turmeric, cumin and zucchini. Cook over medium heat for 5 minutes. Add tomato sauce, peas and cayenne pepper and cook until zucchini is tender, about 15 minutes. SERVES 6.
