I find it interesting how they grown on wood or beech trees. Makes a difference in appearance, they look so clean and smooth you would think they were fake. I usually just sauté them in vegan margarine with a bit of soy sauce, but I also have a great recipe for beech mushroom gyoza (I'm gonna post it later on).
